2011 Spring

Issue 45

YOGURT FRUIT CAKE

This recipe was kindly sent in by Shirley Swallow

 

Ingredients

350gm (12oz) Self raising flour

100gm (3oz) Caster sugar

2 Large eggs

150gms (4.5oz) natural Yogurt

Wash out yogurt carton and use to measure out

150gms (4.5oz) Corn Oil

350gm (12oz) Mixed dried fruit

1 tspn Almond Essence (optional)

 

Method

Place all ingredients except dried fruit in a bowl and mix well together

Add dried fruit and mix again

Pour mixture into prepared and lined 1kg/2lb loaf tin.

Bake at 150C for 1.5 hours

                      

(Halve ingredients to make a 500gm/1lb cake)

SPICY PORK WITH BASMATI RICE

Serves 4 Approx.

 

Ingredients

450gm (16ozs) Diced Pork

225gm (8ozs) Basmati Rice

1 tspn Curry Powder (or to taste)

1 Chopped & sliced Onion

1 desrtspn Mixed Herbs

200gms (7 fl oz) Stock or Cube

Tin Chopped Tomatoes

Salt

2 Chopped Dried Apricots

 

Method

Rinse the rice and put into saucepan with cold water to cover

Add salt & Curry Powder

Bring to boil and cover

Simmer for 15 mins

Heat a frying pan with a little oil and add the pork and the onion

Fry briskly for 8 to 10 mins

Add the chopped apricots and herbs

Pour in stock and simmer together for another 5 mins

Add tomatoes and cook through until meat is tender

Put the curried rice onto the plate & top with the pork and juices

 

 

2011 Autumn

SUMMER BERRY SLICE

Makes 10-12 portions

 

Ingredients

6oz (180gm) Butter

11oz (340gm) Sugar

9oz (270gm) Self Raising Flour

6 fl oz (180cc) Milk

1 tspn Vanilla Essence

Approx 10oz (310gm) Mixed Berries

(Punnet Frozen strawberries, cherries, blackberries, blueberries, etc.)

Sprinkle with sugar & leave to defrost

 

Method

Grease a baking tin (approx 9in) & line with baking paper

Beat butter & sugar until light then

Gradually add eggs, flour & milk and

Stir in vanilla essence

Spread half of mixture in baking tin

Top with sweetened berries

Spoon remaining sponge mix on top of fruit

Set oven to Gas 4/5 180C (370F)

Bake in centre of oven for 45mins till set & brown

Leave to cool in tin then dust with icing sugar
